MADE IN FRANCE
A proud heritage
Every Bon Centuri knife is made in France. The production takes place in the small rural town of Theirs, not far from to the culinary city of Lyon and the legendary wine region of the Rhone valley. Here, in a melting pot of culture, art and gastronomy, the grand tradition of knife making has been refined for centuries by the most passionate craftsmen. Not surprisingly, the town of Theirs is by many regarded as the knife manufacturing capital of the world.
Today, some of the world’s leading knife makers combine traditional craftsmanship with modern technology to produce knives of the highest standards. We are proud to be a part of this rich heritage.
ONLY THE FINEST MATERIALS
Made of either exquisite walnut wood or high quality PMMA resin and solid brass rings, our colorful and smooth handles add a distinct character to our knives. Using an innovative and unique design, they consists of 13 individual parts that are meticulously put together before being carefully polished to ensure a perfect finish. Combined with a high performance razor sharp blade in either beautiful stainless steel or rough looking carbon steel, our knives are perfectly balanced for an excellent cutting experience and built to stand the test of time.
High performance Carbon Steel
Before the invention of stainless steel, all knives where made of carbon steel. Today, many professional chefs and knife collectors regard as their favorite. For our carbon steel knives we use XC75 high carbon steel, heat treated and hardened to 58 HRC for optimal performance. It is a classic steel that has been used by generations of knife makers and is renowned for its premium quality, overall toughness and ability to take an extremely sharp edge.
As carbon steel is very pure, it tends to react with acid and oxidize. Over time, each blade will develop its own distinct dark grey patina. The patina is not only beautiful, but also naturally helps to protect the knife blade from corrosion. To facilitate this process, we have forced a light patina on our blades from the start, protecting them out of the box and giving them the best condition to age with beauty.
High-end Stainless Steel
For our stainless steel chef's knives, we use a nitrogen reinforced high carbon steel called 4116N. It is the latest generation stainless steel developed specifically for heavy wear and tear applications where hardness, corrosion resistance and reliability is essential. Known for its outstanding capabilities, it used by some of the world's top knife makers as well as in the surgical tools and aerospace industry.
For our knives the steel has been optimally heat treated and hardened to 58 HRC, which enables high performance blades that are razor sharp and have excellent edge retention. The addition of nitrogen in the steel further enhances the overall strength and corrosion resistance of the blades, ensuring a beautiful satin finish and long lasting performance.
As an outstanding alternative to natural wood, we use hand made high-quality PMMA resin. It is a recyclable premium material and excellent to use as knife handle material. It is extremely stable, very comfortable to hold and takes a fantastic finish when polished. Every color nuance in every individual piece of our handles features an alluring, subtle, flow-like pattern as a result of meticulous craftsmanship blending methods, ensuring that each handle will have it’s unique and personal character.
Premium Walnut Wood
We use walnut wood in our natural wood handles. Revered as a premium hardwood, it is commonly used in high-end furniture and gunstocks and has a beautiful chocolate brown color, with a mesmerizing greyish, purple cast. It makes for an exquisite knife handle material, with excellent dimensional stability, good shock resistance and general strength properties. Furthermore, it has a tremendous natural lustre and a fine texture that generates a nice warm feeling in your hand.

Bon Centuri knives are crafted by 5th generation knife makers, using a combination of traditional craftsmanship methods and state of the art technology.
From the heat treatment and the precise sharpening of the blades, to the careful assembly and polishing of the handles, every step of the manufacturing process is a result of over 250 years of evolution.
Drawing on this heritage, every Bon Centuri knife is made with sincere attention to detail. And as a result we are able to produce perfectly balanced knives for an excellent cutting experience, that are finished to the highest standards.
Every knife is unique
The natural variations in the walnut wood and the hand made patterns in our handles, give each Bon Centuri knife a subtle yet distinct individual character.
We think the uniqueness of each knife, the tremendous amount of craftsmanship it takes to produce one, and the amount of history and knowledge that lies behind them, deserves recognition.
As such, we have given each knife a unique number.
To ensure the authenticity and quality of each Bon Centuri knife, every knife comes with a certificate. In it, the number engraved on the knife blade is printed.
